With over 3 branches, the business owner Gerhard Lola, a 37-year-old resident of Mandaluyong, proves that you can learn anything, even if you have no prior knowledge of cooking. He turned his dream of a successful Lechon Belly business into reality with strong determination. His business journey reportedly began at his in-law’s house in Taytay, Rizal, during a slower period in life. Initially interested in chicken grilling, Gerhard asked his friend for help in making a homemade barrel smoker. When he saw the grill, he felt truly delighted, choosing to cook something other than chicken. This experience inspired him to start cooking bellychon.

Early Struggles

Prior to the devastating impact of the pandemic, he was already grappling with a substantial burden of debt. As of December 2020, he was single-handedly managing the entire operation. The process of roasting, to put it mildly, is quite intense – one might even label it scorching, given the relentless heat of the sun. Shouldering this demanding task without any external support became an overwhelmingly exhausting endeavor. Amidst this challenging journey, he encountered a particularly memorable experience when the initial batch ended up burnt, causing him to fall behind in his cooking schedule during the early hours of December 24th

But then, he identified and shared both the problem and its solution

Around two to three months he needed to become skilled at grilling and seasoning it to perfection.

  • Considering quitting
    At one point, he seriously thought about stopping. But from his wife and family provided him with a strong support system.
  • Solo Cooking Struggle
    He is only a one-man team. Now employed with more than six employees
  • Remote Location
    His roasting location was somewhat remote, he decided to look for a spot for his first physical store. And now leading the way with three branches.
